Brunch makes me so happy ! What’s not to love about pancakes, eggs, sausages, fresh fruit and pastries in the middle of the day! The other day I was craving brunch and decided Salmon croquettes would make a great addition to my brunch. Not only are Salmon Croquettes delicious, light and savory but they are simple and inexpensive to make.
Here is the recipe for my Salmon Croquettes:
- large 14oz can of salmon
- ½ cup of flour ( I prefer an equal mixture of cornstarch and regular flour)
- 1 egg
- ½ a finely diced large onion and or half a cup of diced scallions
- 1 finely diced large red or green pepper
- Spice : thyme, paprika, garlic, chilli flakes or diced fresh Thai chilli
- Panko ( Japanese style breadcrumbs ) optional
After opening up the can of salmon, drain off the water and gently open up the pieces on a plate to remove the bones. Place the salmon in a large mixing bowl and add your egg, flour, diced vegetables and spice. Mix very well and then form into a croquette using your hands. Keep your portions even using a simple measuring cup.
Pour a layer of panko breadcrumbs on a plate and place the formed croquettes on the plate. Turn the croquettes on both sides to pick up the breadcrumbs. Fry the croquettes in a shallow amount of oil for at least 5 minutes on both sides or until golden brown. Halfway into frying cover the pan with a lid for 2-3 minutes to make sure the center of the croquette is cooked. Fry on medium heat and avoid burning the crust.
Feel free to enjoy your salmon croquette with some fresh greens as a main dish or with the rest of your brunch as I did.
